One of my absolute favorite things to do is look up recipes. I've been looking up Halloween recipes since August and I've recently gotten in to the diet recipe circut as well. I mean, why should I limit myself to only cooking for other people when there are a bazillion low-calorie recipes out there? On the menu this weekend: alfredo spaghetti squash (between 1 and 3 Points for 2 cups of the stuff - that's around 200 calories for all of you non-Weight Watchers friends) and perhaps some very odd diet cupcakes. The only regret I have about going home this weekend is that I won't be able to make my 1 Point (approximately 70 calories) pumpkin scones until Tuesday morning because all of the ingredients for them are in my fridge in College Station. Pumpkin scones and chocolate coffee for breakfast on Wednesday though, for sure! Being on a diet actually satisfies the little foodie in me better than non-restricted eating ever could because I have to be creative when I eat (italian broccoli, southwestern sirloin, and maple-roasted vegetables anyone?) rather than just stick a frozen pizza in the oven. Plus, I'd take being a 33-pounds-lighter faux foodie over frozen fatten fare any day.
